ZERO Chemicals Used on the Olive Trees
Trees are tended to in natural ways (no chemical fertilizers) using intergrazing of livestock, composts, and cover cropping to maximize the health of the fruit.
Olives are Carefully Picked in Small Batches
Made the slow, old fashioned way that mother nature loves: ZERO Chemicals and No Extreme Temperatures!
Within 3 days of being picked, the olives are “malaxed”, meaning they are slowly and continuously churned under controlled temperatures to help release oil droplets from the fruit
California Olive Oil Council Certified
Every batch of this olive oil carries the COOC seal of approval. The COOC’s goal is to give consumers confidence in knowing they are buying 100% true extra-virgin olive oil made from 100% California olives. To earn the COOC seal, the olive oil must pass chemical analysis standards and be taste-tested by the COOC’s highly trained taste panel.
The COOC certification program is simple. California producers submit their olive oil annually to an independent lab for analysis and to the COOC for a sensory evaluation. The COOC panel, comprised of trained tasters, use a blind tasting method to guarantee objectivity, tasting for attributes (overall quality) as well as defects. Only oils made from 100% California olives who meet the requirements and high standard are awarded the COOC certification.
To carry the seal, the Olive Oil must be:
Fresh- Olive Oil should be consumed within 18 months of bottling the get all the health benefits. The COOC seal ensures the olive oil is at its freshest.
Made without Chemicals or Extreme Heat: Extra-virgin is the highest grade an olive oil can receive — that means it’s produced without chemicals or extreme heat— and the olive fruit must be picked with great care to preserve its quality. Olive oils labeled with the COOC seal are extra-virgin and California-grown.
Have Optimum Flavor: During a blind taste test, the COOC panel ensures an oil is free of flavor defects and taste flaws. Flavor defects indicate the use of poor quality olives or olives that are not fresh. Milling at a high temperature (over 86 degrees F) can also negatively impact flavor and quality. Defects may include rancidity, due to the oxidation process that occurs as oils age, in addition to others.
How To Use It
I love to use this olive oil in dressings and for roasting veggies!
Super easy:
Heat a convection oven to 350 degrees (this way the olive oil isn’t roasted beyond its smoke point).
Toss a mixture of vegetables (I use carrots, cauliflower, and broccoli) in Burrough’s Family Olive Oil and spread onto a roasting pan. Sprinkle with San Juan Sea Salt.
Roast for 15-20 minutes.
The mixture of salty and crunchy from the roasted farm fresh veggies is a household delight!
Moms: even if your kids say they don't like roasted carrots or cauliflower, keep adding these cooked vegetables to their plates. Eventually and maybe with reward they can be coaxed into eating them. My kids love roasted veggies and I feel extra good knowing the olive oil and sea salt being used to cook them supports farmers and an agricultural way of life that builds the health of wilderness and the health of the home.
